When stuffed with a flavorful mixture of lentils and spinach, they become a satisfying dish suitable for vegetarians and meat-eaters alike. This recipe combines earthy flavors with fresh greens, making it a great choice for a healthy lunch or dinner.

Ingredients

  • 4 large Portobello mushrooms
  • 1 cup cooked lentils
  • 2 cups fresh spinach, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan or vegan cheese
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Preparation

Start by preheating your oven to 375°F (190°C). Clean the Portobello mushrooms by gently wiping them with a damp cloth. Remove the stems and set them aside for the filling.

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute. Then, add the chopped mushroom stems and cook until tender, about 5 minutes.

Stir in the cooked lentils and chopped spinach. Cook until the spinach wilts, about 2 minutes. Season with salt, pepper, and red pepper flakes if desired. Remove from heat and mix in half of the cheese.

Brush the mushroom caps with the remaining olive oil and place them on a baking sheet. Spoon the lentil and spinach mixture into each mushroom cap, pressing down gently. Top with the remaining cheese.

Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is golden. Serve warm, garnished with fresh herbs if desired.
