  • 4 large bell peppers (any color)
  • 1 pound shrimp, peeled and deveined, or 1 pound smoked sausage, sliced

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional for extra heat)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Preparation Steps

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the peppers with olive oil and place them in a baking dish.

In a large skillet, heat the olive oil over medium heat. If using sausage, cook until browned; if using shrimp, cook until pink and opaque. Remove from skillet and set aside.

In the same skillet, add chopped onion and garlic. Sauté until fragrant and translucent, about 3 minutes. Add diced tomatoes, Cajun seasoning, paprika, cayenne (if using), salt, and pepper. Cook for another 2 minutes.

Combine the cooked rice with the sautéed vegetables and meat or shrimp. Mix well to incorporate all flavors.

Spoon the filling into each prepared bell pepper, pressing down gently. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake an additional 10 minutes to slightly brown the tops.
