Start by preheating your oven to 375°F (190°C). Wash and peel the carrots and parsnips thoroughly. Using a mandoline slicer or a sharp knife, slice the vegetables into very thin, even rounds to ensure they crisp up nicely.

In a large bowl, toss the sliced vegetables with olive oil, making sure they are evenly coated. Sprinkle with sea salt and freshly ground black pepper, then toss again to distribute the seasonings evenly.
