- 4 boneless, skinless chicken breasts
- 1 large butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh sage, chopped
- 2 cloves garlic, minced
- Optional: balsamic glaze for drizzling
Instructions
Preheat your oven to 400°F (200°C). Toss the cubed butternut squash with 1 tablespoon of olive oil, salt, pepper, and half of the chopped sage. Spread evenly on a baking sheet and roast for 25-30 minutes until tender and caramelized.
Meanwhile, heat the remaining olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and the remaining sage. Cook the chicken for about 6-7 minutes per side, or until fully cooked and golden brown.
During the last few minutes of cooking the chicken, add the minced garlic to the skillet and cook for 1 minute until fragrant. Remove from heat.
To serve, plate the roasted butternut squash alongside the chicken breasts. Drizzle with balsamic glaze if desired for a touch of sweetness. Garnish with extra sage leaves for presentation.
