Creamy Freekeh and Roasted Garlic Soup for Cold Days

When the temperature drops and you need a comforting meal, a warm bowl of soup can be just what you need. This Creamy Freekeh and Roasted Garlic Soup is perfect for cold days, offering a hearty and nutritious option that warms you from the inside out.

Ingredients

  • 1 cup of freekeh
  • 4 cups of vegetable broth
  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 cup of heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley, thyme)

Preparation Steps

Start by roasting the garlic. Preheat your oven to 400°F (200°C). Cut the top off the garlic head, drizzle with a little olive oil, wrap in foil, and roast for about 30 minutes until soft and fragrant.

While the garlic is roasting, rinse the freekeh under cold water. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

Add the rinsed freekeh to the pot and stir for a minute to toast slightly. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20-25 minutes until the freekeh is tender.

Once the garlic is roasted and cool enough to handle, squeeze out the soft cloves and add them to the soup. Use an immersion blender or regular blender to puree the soup until smooth and creamy.

Stir in the heavy cream or coconut milk, season with salt and pepper, and heat through. Adjust the seasoning as needed.

Serving Suggestions

Serve the soup hot, garnished with fresh herbs like parsley or thyme. For added texture, sprinkle some toasted nuts or seeds on top. This soup pairs well with crusty bread for a complete meal.

Enjoy this creamy, hearty soup on chilly days to keep warm and nourish your body with wholesome ingredients.
