Crispy Tempeh and Veggie Tortilla Wraps with Peanut Sauce

Ingredients

  • 1 block (8 oz) tempeh, sliced into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped cilantro
  • Peanut sauce (see recipe below)

Peanut Sauce Recipe

Mix together 1/4 cup peanut butter, 2 tablespoons soy sauce, 1 tablespoon lime juice, 1 teaspoon honey, and a splash of warm water until smooth. Adjust water for desired consistency.

Preparation

Start by marinating the tempeh slices in soy sauce for 10 minutes. Heat olive oil in a skillet over medium heat. Add the tempeh and cook until golden and crispy, about 5-7 minutes per side.

While the tempeh cooks, prepare the vegetables. Shred the lettuce, carrots, and slice the cucumber. Set aside.

Warm the tortillas in a dry skillet or microwave. Lay each tortilla flat and start assembling.

Place some shredded lettuce on each tortilla, followed by crispy tempeh, carrots, cucumbers, and cilantro. Drizzle generously with peanut sauce.

Roll up the tortillas tightly to form wraps. Slice in half if desired and serve immediately with extra peanut sauce on the side.
