Crispy Tempeh and Veggie Wraps with Peanut Sauce

  • 1 block of tempeh, sliced into strips
  • 2 tablespoons soy sauce

  • 1 cup shredded carrots
  • 1 cucumber, sliced
  • 1 bell pepper, sliced
  • 4 large whole wheat or rice paper wraps
  • Fresh herbs (cilantro, mint)
  • For the peanut sauce:
    • 3 tablespoons peanut butter
    • 1 tablespoon soy sauce
    • 1 tablespoon lime juice
    • 1 teaspoon honey or maple syrup
    • 2-3 tablespoons water (to thin)

Instructions

Start by preparing the tempeh. In a bowl, mix soy sauce and olive oil. Marinate the tempeh slices in the mixture for about 10 minutes. Heat a skillet over medium heat and cook the tempeh until crispy and golden brown, about 5-7 minutes per side.

While the tempeh cooks, prepare the peanut sauce. In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, and water until smooth. Adjust the water to achieve your desired consistency.

Next, soak each rice paper wrap in warm water for about 10-15 seconds until flexible. Lay the wrap flat on a clean surface. Place a few slices of tempeh, shredded carrots, cucumber, bell pepper, and herbs in the center of the wrap.

Fold the sides of the wrap over the filling, then roll tightly from the bottom to the top. Repeat with remaining wraps and fillings.
