Ingredients

  • 14 oz (400 g) firm tofu, pressed and cubed
  • 2 tablespoons cornstarch or arrowroot powder
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 2 tablespoons soy sauce or tamari
  • Fresh basil or cilantro for garnish
  • Salt and pepper to taste

Preparation Steps

Start by pressing the tofu to remove excess moisture. Cut it into bite-sized cubes and toss with cornstarch until evenly coated. This will ensure a crispy exterior when cooked.

Heat vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden brown and crispy on all sides, about 8-10 minutes. Remove from the skillet and set aside.

In the same skillet, add a little more oil if needed. Sauté the minced garlic until fragrant, about 30 seconds. Add the sliced bell pepper and snap peas, cooking for another 3-4 minutes until tender but still crisp.

Return the crispy tofu to the skillet. Add soy sauce, lemon juice, and lemon zest. Toss everything together to coat evenly and heat through for 2 minutes. Adjust seasoning with salt and pepper as needed.

Serving Suggestions

Serve the stir-fry hot, garnished with fresh basil or cilantro. This dish pairs beautifully with a chilled glass of Sauvignon Blanc, whose crisp acidity complements the lemon and garlic flavors perfectly.
