Ingredients

  • 2 large zucchinis
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for baking or frying

For the Garlic Aioli

  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Preparation

Start by preheating your oven to 400°F (200°C) if baking, or heating oil in a deep fryer or skillet for frying. Wash and cut the zucchinis into fry-shaped sticks.

In three separate bowls, place the flour, beaten eggs, and a mixture of panko, Parmesan, garlic powder, salt, and pepper. Dip each zucchini stick into the flour, then the egg, and finally coat with the breadcrumb mixture.

If baking, arrange the coated zucchini fries on a baking sheet lined with parchment paper, lightly drizzled with olive oil. Bake for about 20-25 minutes or until golden and crispy. For frying, cook in hot oil until crispy and golden, about 3-4 minutes.

Making the Garlic Aioli

Combine mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper in a small bowl. Mix well and refrigerate until ready to serve.

Serving Suggestions

Serve the crispy zucchini fries hot with a generous side of garlic aioli dip. Garnish with fresh herbs like parsley or basil for an extra touch of flavor. These fries are perfect as a snack, appetizer, or side dish for any meal.
