Stir-fried tofu with edamame and ginger is a delicious and healthy dish that combines the flavors of fresh vegetables and aromatic spices. It is perfect for a quick weeknight dinner or a nutritious lunch option. This recipe highlights the versatility of tofu and the vibrant taste of edamame, enhanced with the zing of fresh ginger.
Ingredients
- 14 oz (400 g) firm tofu, pressed and cubed
- 1 cup edamame beans (fresh or frozen)
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 green onion, sliced (for garnish)
- Sesame seeds (optional, for garnish)
Preparation Steps
Begin by pressing the tofu to remove excess moisture. Cut it into bite-sized cubes. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
In the same skillet, add a little more oil if needed. Sauté the minced garlic and grated ginger until fragrant, about 1 minute. Add the edamame beans and cook for another 3-4 minutes, stirring occasionally.
Return the browned tofu to the skillet. Pour in the soy sauce and sesame oil, stirring well to coat all ingredients evenly. Cook for an additional 2-3 minutes to allow flavors to meld.
Serving Suggestions
Garnish the stir-fry with sliced green onions and sesame seeds if desired. Serve hot over steamed rice or noodles for a complete meal. This dish pairs well with a side of steamed vegetables or a light salad.
Health Benefits
Edamame is rich in plant-based protein, fiber, and essential nutrients, making it an excellent addition to a balanced diet. Ginger adds anti-inflammatory properties and aids digestion. Tofu provides a good source of protein and is a versatile meat substitute for vegetarians and vegans.
