Ingredients
- 8 oz (225 g) rice noodles or your preferred pasta
- 1 block (14 oz) firm tofu, pressed and cubed
- 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
- 3 tablespoons sesame oil
- 3 tablespoons soy sauce or tamari
- 2 tablespoons rice vinegar
- 2 tablespoons maple syrup or honey (optional)
- 2 tablespoons toasted sesame seeds
- 3 green onions, sliced
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
Preparation Steps
Start by cooking the noodles according to the package instructions. Drain and set aside.
Meanwhile, heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining sesame oil. Sauté the garlic and ginger until fragrant, about 1 minute. Add the mixed vegetables and stir-fry until tender-crisp, about 3-5 minutes.
In a small bowl, whisk together soy sauce, rice vinegar, maple syrup (if using), and a little water if needed to thin the sauce.
Return the tofu to the skillet and pour the sauce over everything. Toss to combine and heat through for 2 minutes.
Add the cooked noodles to the skillet and toss until well coated with the sauce. Sprinkle with toasted sesame seeds and sliced green onions.
Serving Suggestions
Serve these sesame noodles warm or at room temperature. They make a great quick lunch or dinner and can be paired with a side of steamed dumplings or a fresh salad for a complete meal.
