Freekeh and Lemon Herb Cod with Roasted Vegetables

Ingredients

  • 4 cod fillets
  • 1 cup freekeh
  • 2 lemons (zested and juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Assorted vegetables (bell peppers, zucchini, cherry tomatoes)
  • Salt and pepper to taste

Preparation

Start by preheating your oven to 400°F (200°C). Rinse the freekeh under cold water and cook according to package instructions until tender. Drain and set aside.

In a small bowl, mix the lemon zest, lemon juice, olive oil, oregano, thyme, salt, and pepper. Brush the cod fillets with this mixture and set aside to marinate for about 10 minutes.

While the fish marinates, chop the vegetables into bite-sized pieces. Toss them with a little olive oil, salt, and pepper. Spread the vegetables on a baking sheet and roast in the oven for 20-25 minutes until tender and slightly caramelized.

Meanwhile, heat a skillet over medium heat and cook the cod fillets for about 3-4 minutes per side until they are golden and opaque.
