Ingredients
- 1 pound Brussels sprouts, trimmed and halved
- 4 slices bacon, chopped

- 3 egg yolks

- 1/2 cup unsalted butter, melted
- 2 cloves garlic, minced

Preparation
Start by roasting the Brussels sprouts. Preheat your oven to 400°F (200°C). Toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for about 20-25 minutes until golden brown and crispy on the edges.
While the Brussels sprouts are roasting, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. Once cooled, chop into small pieces.
Making the Garlic-Hollandaise
