Enjoy a delicious and flavorful seafood dish with our recipe for Grilled Catfish with Cajun Seasoning, Lemon Butter, and Roasted Vegetables. This meal combines smoky spices, tangy lemon, and tender vegetables for a perfect summer dinner or weekend treat.

Ingredients

  • 4 catfish fillets
  • 2 tablespoons Cajun seasoning
  • 1 lemon, sliced
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Assorted vegetables (bell peppers, zucchini, cherry tomatoes)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

Start by preheating your grill to medium-high heat. While the grill heats, prepare the vegetables by chopping them into bite-sized pieces and tossing with olive oil, salt, and pepper.

Season the catfish fillets generously with Cajun seasoning on both sides. Place lemon slices on top of each fillet for added flavor during grilling.

Cooking

Grill the vegetables first, placing them in a grill basket or on a sheet of foil, and cook for about 10 minutes, turning occasionally until tender and slightly charred.

Meanwhile, place the catfish fillets on the grill. Cook for about 4-5 minutes per side, or until the fish flakes easily with a fork. During the last minute, melt the butter with garlic and a squeeze of lemon juice to prepare the lemon butter sauce.

Serving

Remove the fish and vegetables from the grill. Drizzle the lemon butter over the grilled catfish and vegetables. Garnish with additional lemon slices if desired.

This dish pairs well with rice, crusty bread, or a fresh green salad. Enjoy your flavorful and healthy grilled catfish meal!
