Ingredients

  • 4 ears of corn, husked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the Cilantro Lime Dressing:
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped cilantro
  • 1 tablespoon honey or agave syrup
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • Salt to taste

Preparation

Start by preheating your grill to medium-high heat. Brush the corn with 1 tablespoon of olive oil and season with salt and pepper. Grill the corn for about 10 minutes, turning occasionally until charred and cooked through. Once cooled, cut the kernels off the cob and place them in a large bowl.

In a small bowl, whisk together the lime juice, chopped cilantro, honey, minced garlic, and a pinch of salt. Slowly drizzle in the olive oil while whisking until the dressing is well combined.

Add the black beans, diced red bell pepper, and red onion to the bowl with the grilled corn. Pour the cilantro lime dressing over the salad and toss gently to combine. Taste and adjust salt or lime juice as needed.
