Ingredients
- 1 cup cooked brown rice or quinoa
- 1 lb (450g) boneless, skinless chicken breast, diced
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1 cup shredded carrots
- 1/2 cup chopped green onions
- 1/4 cup low-sodium soy sauce or tamari
- 1 teaspoon sesame oil
- 1 head of iceberg or butter lettuce, separated into leaves
- Optional toppings: chopped peanuts, chopped fresh cilantro, sliced chili peppers
Instructions
Start by cooking the whole grains according to package instructions. Set aside to cool slightly. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion and minced garlic. Sauté until fragrant and translucent, about 2-3 minutes. Stir in the shredded carrots and cook for another 2 minutes. Return the cooked chicken to the skillet and add the soy sauce and sesame oil. Mix well and cook for an additional 2 minutes to combine flavors.
Combine the cooked grains with the chicken mixture. Stir to evenly distribute all ingredients. Taste and adjust the seasoning if needed, adding more soy sauce or a splash of lime juice for extra flavor.
Serving
To serve, spoon the chicken and rice mixture into individual lettuce leaves. Top with chopped green onions, peanuts, cilantro, or chili peppers if desired. Wrap the lettuce around the filling and enjoy a healthy, flavorful bite.
This dish is versatile and can be customized with your favorite vegetables or sauces. It’s a perfect way to enjoy a nutritious Asian-inspired meal that’s light yet satisfying.
