Healthy Grilled Vegetable and Lentil Salad with Lemon Tahini Dressing

Ingredients

  • 1 cup dried lentils (green or brown)
  • 2 zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow squash, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

For the Lemon Tahini Dressing

  • 3 tablespoons tahini
  • Juice of 1 lemon
  • 2 tablespoons water (or more for desired consistency)
  • 1 garlic clove, minced

Instructions

Start by cooking the lentils. Rinse them thoroughly and cook in boiling water until tender, about 20-25 minutes. Drain and set aside to cool.
