Herbed Yogurt Aioli and Lamb Kofta Wraps

Ingredients

  • 500g ground lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 4 pita or flatbread wraps
  • For the Herbed Yogurt Aioli:
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • Salt to taste

Preparing the Lamb Kofta

In a large bowl, combine the ground lamb, chopped onion, minced garlic, cumin, coriander, salt, and pepper. Mix well until all ingredients are evenly incorporated. Shape the mixture into small, elongated patties or logs.

Heat a grill or skillet over medium-high heat. Cook the kofta for about 4-5 minutes on each side, until browned and cooked through. Remove from heat and set aside.

Making the Herbed Yogurt Aioli

In a bowl, whisk together the Greek yogurt, chopped dill, mint, lemon juice, minced garlic, and a pinch of salt. Adjust seasoning to taste. Chill in the refrigerator for at least 15 minutes to let the flavors meld.

Assembling the Wraps

Warm the pita or flatbread wraps. Spread a generous spoonful of the herbed yogurt aioli on each. Place the cooked lamb kofta on top and add any additional toppings such as sliced cucumbers, tomatoes, or lettuce.
