Ingredients
- 4 swordfish steaks (about 1 inch thick)
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- For the hollandaise sauce:
- 3 egg yolks
- 1 tablespoon lemon juice
- 1/2 cup unsalted butter, melted
- Pinch of cayenne pepper (optional)
- For the lemon butter:
- 1/4 cup unsalted butter
- Juice of 1 lemon
- 1 teaspoon chopped fresh parsley (optional)
Preparation
Grilling the Swordfish
Preheat your grill to medium-high heat. Brush the swordfish steaks with olive oil and season with salt and pepper. Grill for about 4-5 minutes on each side, until the fish is opaque and has nice grill marks. Remove from the grill and keep warm.
Making the Hollandaise Sauce
In a heatproof bowl, whisk the egg yolks and lemon juice until combined. Place the bowl over simmering water (double boiler) and whisk constantly until the mixture thickens. Gradually add the melted butter, whisking continuously until smooth. Season with a pinch of cayenne pepper if desired. Keep warm but do not overheat to prevent curdling.
Preparing Lemon Butter
In a small saucepan, melt the butter over low heat. Stir in the lemon juice and cook for another minute. Remove from heat and stir in chopped parsley if using. Set aside.
Serving
Place the grilled swordfish steaks on serving plates. Spoon the warm hollandaise sauce over the fish and drizzle with lemon butter. Garnish with extra parsley if desired. Serve immediately with your favorite sides, such as steamed vegetables or a fresh salad.
This dish offers a delightful combination of smoky, tender fish with rich, buttery sauces, perfect for impressing guests or enjoying a luxurious meal at home.
