Eggplant jerky is a delicious and healthy snack that’s easy to make at home. Rich in protein and fiber, it offers a nutritious alternative to traditional jerky. In this article, we’ll guide you through the steps to create your own eggplant jerky.
Ingredients Needed
- 2 large eggplants
- 3 tablespoons soy sauce or tamari
- 2 tablespoons olive oil
- 1 tablespoon maple syrup or honey
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Optional: chili flakes for spice
Preparation Steps
Start by washing the eggplants thoroughly. Slice them into thin, uniform strips about 1/8 inch thick. Uniform slices ensure even drying and a consistent texture.
In a bowl, whisk together soy sauce, olive oil, maple syrup, smoked paprika, garlic powder, black pepper, and chili flakes if using. This mixture will serve as your marinade.
Place the eggplant slices in a large resealable bag or shallow dish. Pour the marinade over the slices, making sure each piece is well coated. Marinate for at least 30 minutes, or up to 2 hours for more flavor.
Drying the Eggplant
Preheat your oven to 150°F (65°C) or set your dehydrator to the same temperature. Line baking sheets with parchment paper or use dehydrator trays.
Arrange the marinated eggplant slices in a single layer on the prepared trays. Ensure they are not overlapping to allow proper air circulation.
Dry the eggplant for 4-6 hours, flipping the slices every 1-2 hours. The jerky is ready when it is dry, firm, and slightly chewy but not brittle.
Storing and Serving
Allow the eggplant jerky to cool completely before storing. Keep it in an airtight container or resealable bag. It can last up to two weeks at room temperature or longer if refrigerated.
Enjoy your homemade eggplant jerky as a protein-packed snack during hikes, school, or as a healthy treat anytime. Experiment with different spices to customize the flavor to your liking.
