Discover the rich flavors of Lamb Tagine with Roasted Carrots and Apricots, a traditional Moroccan dish that combines tender lamb with sweet and savory ingredients. Perfect for a family dinner or special occasion, this recipe offers a delightful mix of spices and textures.

Ingredients

  • 2 pounds lamb shoulder, cut into chunks
  • 4 large carrots, peeled and sliced
  • 1 cup dried apricots
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups beef or vegetable broth
  • Fresh cilantro for garnish

Preparation Steps

Start by heating the olive oil in a large pot or Dutch oven over medium heat. Add the lamb chunks and cook until browned on all sides. Remove the lamb and set aside.

In the same pot, add the chopped onion and cook until translucent. Stir in the minced garlic and cook for another minute. Add the spices: cumin, cinnamon, turmeric, paprika, and ginger. Cook for 1-2 minutes to release their aroma.

Return the browned lamb to the pot. Pour in the broth and bring to a simmer. Cover and reduce heat to low. Let it cook gently for about 1.5 hours, or until the lamb is tender.

While the lamb is cooking, roast the carrots in the oven at 400°F (200°C) for about 20 minutes until tender and slightly caramelized. Add the roasted carrots and dried apricots to the stew during the last 30 minutes of cooking to allow flavors to meld.

Serving Suggestions

Serve the Lamb Tagine hot, garnished with fresh cilantro. It pairs beautifully with couscous, rice, or crusty bread. The combination of tender lamb, sweet apricots, and roasted carrots creates a harmonious blend of flavors that will delight your palate.
