Mediterranean Falafel and Tzatziki in Whole Wheat Tortillas

Ingredients

  • 1 cup dried chickpeas (soaked overnight) or 1 can chickpeas, drained

  • 1 teaspoon coriander
  • Salt and pepper to taste
  • 1/2 teaspoon baking soda
  • 2 tablespoons flour or chickpea flour
  • Olive oil for frying
  • Whole wheat tortillas
  • For the Tzatziki:
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Preparation

Start by preparing the falafel mixture. If using dried chickpeas, drain and rinse them after soaking. In a food processor, combine chickpeas, garlic, onion, parsley, cumin, coriander, salt, pepper, and baking soda. Blend until the mixture is coarse but holds together when formed into a ball. Add flour if needed to achieve the right consistency.

Shape the mixture into small balls or patties. Heat olive oil in a frying pan over medium heat. Fry the falafel until golden brown and crispy on all sides, about 4-5 minutes per batch. Remove and drain on paper towels.

Meanwhile, prepare the tzatziki. In a bowl, combine Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper. Mix well and refrigerate until ready to serve.

Warm the whole wheat tortillas slightly to make them more pliable. Assemble the wraps by placing a few falafel balls in the center of each tortilla. Add a generous spoonful of tzatziki on top.
