Ingredients Needed
- 1 cup millet
- 200 grams shrimp, peeled and deveined
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 eggs (optional)
- Salt and pepper to taste
- Green onions for garnish
Cooking Instructions
Start by rinsing the millet under cold water. In a pot, cook the millet according to package instructions until tender. Drain and set aside. Meanwhile, heat a tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp and set aside.
In the same skillet, add a bit more oil if needed. Sauté the garlic until fragrant, then add the mixed vegetables. Cook for 3-4 minutes until vegetables are tender but still crisp. Push the vegetables to one side of the pan.
If using eggs, crack them into the empty side of the skillet and scramble until just set. Mix the cooked millet into the vegetables and eggs. Add the cooked shrimp back to the skillet. Pour soy sauce over the mixture and stir well to combine. Cook for another 2 minutes, allowing flavors to meld.
