Ingredients

  • 1 lb (450g) lamb shoulder, cut into chunks
  • 1 cup dried prunes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation Steps

Start by heating the olive oil in a large pot over medium heat. Add the lamb chunks and cook until browned on all sides. Remove the lamb and set aside.

In the same pot, add the chopped onion and cook until translucent. Stir in the minced garlic and cook for another minute. Add the spices: cumin, cinnamon, turmeric, and paprika. Cook for 30 seconds to release their aroma.

Return the lamb to the pot. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 1 hour, or until the lamb is tender.

Meanwhile, rinse the rice under cold water. When the lamb is nearly cooked, add the rice and prunes to the pot. Stir gently, cover, and cook for an additional 20 minutes, or until the rice is fluffy and the prunes are soft.

Serving Suggestions

Garnish the pilaf with freshly chopped cilantro. Serve hot, accompanied by a side of roasted vegetables or a fresh salad for a complete Moroccan-inspired meal.
