Pecan-crusted Catfish with Remoulade and Southern Green Beans

Ingredients

For the Remoulade Sauce

  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard

For the Green Beans

  • 1 pound fresh green beans
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Preparation

Start by preparing the remoulade sauce. Mix mayonnaise, Dijon mustard, hot sauce, chopped pickles, lemon juice, paprika, salt, and pepper in a bowl. Chill in the refrigerator while you prepare the fish and green beans.

For the green beans, blanch them in boiling water for 2-3 minutes until tender-crisp. Drain and set aside. In a skillet, melt butter over medium heat, add minced garlic, and sauté until fragrant. Toss in the green beans, season with salt and pepper, and cook for another 2-3 minutes. Garnish with chopped bacon or almonds if desired.

To prepare the catfish, set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with chopped pecans mixed with panko breadcrumbs. Season the catfish fillets with salt and pepper. Dip each fillet in flour, then eggs, and finally coat thoroughly with the pecan-panko mixture.

Heat olive oil in a large skillet over medium-high heat. Fry the coated catfish fillets for about 3-4 minutes per side, or until golden brown and cooked through. Drain on paper towels.
