Roasted Pork Loin with Peach Salsa and Southern Style Green Beans

Preparation

Preheat your oven to 375°F (190°C). Season the pork loin generously with salt and black pepper. Heat olive oil in a large ovenproof skillet over medium-high heat. Sear the pork loin on all sides until golden brown, about 4-5 minutes per side.

Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Remove from oven, tent with foil, and let rest for 10 minutes before slicing.

Cooking the Green Beans
