Saffron Aioli and Mussels in White Wine Sauce

  • 1 kg fresh mussels, cleaned and debearded
  • 1 cup dry white wine
  • 2 cloves garlic, minced

  • 1 pinch saffron threads
  • 1 cup mayonnaise
  • 1/2 tsp lemon juice
  • 1/4 tsp salt
  • Fresh parsley for garnish

Preparation

Start by preparing the saffron aioli. In a small bowl, combine mayonnaise, lemon juice, salt, and saffron threads. Mix well and let it sit for at least 15 minutes to allow the saffron to infuse the aioli with flavor and color.

Next, in a large pot, heat olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2 minutes.

Add the mussels to the pot, then pour in the white wine. Cover the pot and cook for about 5-7 minutes, shaking occasionally, until the mussels open. Discard any mussels that do not open.

Remove the mussels with a slotted spoon and transfer them to a serving dish. Increase the heat to high and simmer the wine mixture for another 2-3 minutes to reduce slightly.
