Ingredients
- 2 fresh tuna steaks
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup chopped cilantro
- Juice of 2 limes
- 2 cups cooked jasmine rice
- 1 tablespoon olive oil
- Salt and pepper to taste
Preparation
Start by preparing the mango salsa. In a bowl, combine the diced mango, red onion, red bell pepper, chopped cilantro, and lime juice. Mix well and set aside to allow flavors to meld.
Next, cook the cilantro lime rice. In a pot, add cooked rice, lime juice, chopped cilantro, salt, and pepper. Stir to combine and keep warm.
Searing the Tuna
Pat the tuna steaks dry with paper towels. Season both sides with salt and pepper. Heat olive oil in a skillet over high heat. Once hot, add the tuna steaks and sear for about 1-2 minutes per side for rare, or longer if desired.
Serving
Slice the seared tuna into strips and serve atop a bed of cilantro lime rice. Spoon generous amounts of mango salsa over the tuna. Garnish with additional cilantro if desired. This dish pairs well with a light white wine or sparkling water with lime.
