Spicy Andouille Sausage Pasta with Garlic Bread and Mixed Greens

Ingredients

  • 1 pound (450g) of Andouille sausage, sliced
  • 12 ounces (340g) of pasta (penne or rotini recommended)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

For the Garlic Bread

  • 1 baguette or Italian bread
  • 1/2 cup (115g) unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • Salt to taste

For the Mixed Greens Salad

  • 4 cups mixed greens (lettuce, arugula, spinach)
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • Cherry tomatoes, halved
  • Dress with olive oil, lemon juice, salt, and pepper

Preparation

Start by cooking the pasta in salted boiling water according to package instructions. Drain and set aside. Meanwhile, heat olive oil in a large skillet over medium heat. Add sliced Andouille sausage and cook until browned, about 5-7 minutes.

Stir in minced garlic and red pepper flakes, cooking for another minute until fragrant. Add diced tomatoes and smoked paprika, simmering for 10 minutes to develop flavors. Season with salt and pepper as needed.

Toss the cooked pasta into the skillet with the sausage and sauce, mixing well. Garnish with chopped parsley before serving.

Meanwhile, prepare the garlic bread. Mix softened butter with minced garlic, chopped parsley, and a pinch of salt. Slice the baguette and spread the garlic butter on each piece. Toast in the oven at 375°F (190°C) for about 10 minutes until golden and crispy.

For the salad, combine mixed greens, cucumber, red onion, and cherry tomatoes in a large bowl. Dress with olive oil, lemon juice, salt, and pepper just before serving.
