Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 ripe avocados, sliced
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • For the Lime Dressing:
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Salt to taste

Preparation

Start by preparing the lime dressing. In a small bowl, whisk together lime juice, olive oil, honey, minced garlic, and a pinch of salt. Set aside to allow flavors to meld.

Next, season the shrimp with chili powder, cayenne pepper, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Cook the shrimp for about 2-3 minutes on each side until they turn pink and are cooked through.

While the shrimp cook, prepare your tortillas by warming them slightly in a dry skillet or microwave to make rolling easier.

To assemble, lay a tortilla flat and layer with shredded lettuce, cooked shrimp, and sliced avocado. Drizzle with the lime dressing.

Roll up the tortilla tightly, folding in the sides as you go. Repeat with remaining ingredients.
