Discover a fresh and flavorful recipe perfect for a light lunch or a healthy snack: Spicy Tofu and Cucumber Wraps with Sesame Dressing. This dish combines crunchy cucumbers, spicy tofu, and a savory sesame dressing for a delightful taste experience.
Ingredients
- 1 block firm tofu, pressed and cubed
- 2 large cucumbers, thinly sliced
- 4 rice paper wraps or large lettuce leaves
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon chili paste or sriracha (adjust to taste)
- 2 tablespoons sesame seeds
- Fresh cilantro or mint leaves (optional)
For the Sesame Dressing
- 3 tablespoons tahini or sesame paste
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon soy sauce
- Water to thin, as needed
Preparation Steps
Start by preparing the sesame dressing. In a small bowl, whisk together tahini, rice vinegar, honey, and soy sauce. Add water gradually until the dressing reaches a smooth, pourable consistency. Set aside.
Next, cook the tofu. Heat sesame oil in a skillet over medium heat. Add tofu cubes and cook until golden brown on all sides, about 5–7 minutes. Stir in soy sauce and chili paste, cooking for another minute to coat the tofu evenly. Remove from heat.
Prepare the wraps by soaking rice paper in warm water for about 10 seconds until soft, or use large lettuce leaves for a crunchier texture. Place the wrapper on a clean surface.
Layer the slices of cucumber, cooked tofu, and herbs (if using) on the bottom third of the wrapper. Drizzle with the sesame dressing and sprinkle with sesame seeds.
Fold the sides of the wrapper inward and roll tightly from the bottom to the top, enclosing the filling securely. Repeat with remaining ingredients.
Serving Suggestions
Serve the wraps immediately for the best crunch. They can be paired with additional sesame dressing or a side of pickled vegetables for extra flavor. These wraps are perfect for a nutritious lunch or a light dinner.
