Welcome to our springtime recipe feature! Today, we’re excited to share a fresh and flavorful dish: Chicken Piccata with Capers and Lemon, served over a bed of pasta. This dish is perfect for celebrating the vibrant flavors of spring.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper
  • 1 cup all-purpose flour
  • 3 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup capers, drained
  • 2 tablespoons unsalted butter
  • 1 pound pasta (linguine or spaghetti)
  • Fresh parsley, chopped (for garnish)
  • Optional: lemon slices for garnish

Preparation Steps

Start by preparing the chicken. Season the chicken breasts with salt and pepper. Dredge each piece in flour, shaking off excess.

In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.

In the same skillet, pour in the lemon juice and chicken broth. Scrape up any browned bits from the bottom of the pan. Bring the mixture to a simmer.

Add the capers and butter to the skillet. Stir until the butter melts and the sauce slightly thickens. Return the chicken to the skillet and coat with the sauce. Let it simmer for a few minutes to meld the flavors.

Cooking the Pasta

While the sauce is simmering, cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.

Serving

Place a portion of cooked pasta on each plate. Top with a chicken breast and spoon the lemon caper sauce over the chicken and pasta. Garnish with chopped parsley and lemon slices if desired.

This springtime Chicken Piccata is a delightful combination of bright lemon flavors, briny capers, and tender chicken, all served over comforting pasta. It’s perfect for a light yet satisfying meal that celebrates the freshness of spring.
