Sweet Potato and Black Bean Burritos with Spicy Salsa

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • For the spicy salsa:
  • 1 cup diced tomatoes
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons chopped cilantro
  • Juice of 1 lime
  • Salt to taste

Preparation

Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil, cumin, chili powder, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender and slightly crispy.

While the sweet potatoes are roasting, prepare the spicy salsa. In a bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Mix well and set aside to let the flavors meld.

In a skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the black beans and cook for 5 minutes until heated through. Season with a little salt if needed.

Warm the tortillas in a dry skillet or microwave. To assemble, spoon roasted sweet potatoes and black beans onto each tortilla. Sprinkle with shredded cheese, then roll up tightly to form burritos.

Serve the burritos topped with the spicy salsa. For extra flavor, add a dollop of sour cream or a squeeze of lime.
