Sweet Potato and Black Bean Enchiladas

Sweet potato and black bean enchiladas are a delicious and nutritious vegetarian dish that combines sweet, savory flavors with hearty ingredients. Perfect for a family dinner or a special gathering, these enchiladas are easy to prepare and full of flavor.

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation Steps

Start by preheating your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until translucent and fragrant. Stir in the cumin, chili powder, salt, and pepper.

Add the diced sweet potatoes to the skillet, cooking until they are tender, about 10 minutes. Stir in the black beans and cook for another 2-3 minutes. Remove from heat.

Lightly grease a baking dish. Warm the tortillas briefly in the microwave or on a skillet to make them pliable. Spoon some of the sweet potato and black bean mixture onto each tortilla, roll them up, and place seam-side down in the baking dish.

Pour the enchilada sauce evenly over the rolled tortillas. Sprinkle the shredded cheese on top. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serving Suggestions

Garnish the enchiladas with freshly chopped cilantro and serve hot. They pair well with a side of rice, a simple salad, or some guacamole. For an extra kick, add sliced jalapeños or a dollop of sour cream.

Health Benefits

This dish is packed with nutrients. Sweet potatoes are rich in vitamins A and C, fiber, and antioxidants. Black beans provide protein, fiber, and essential minerals. Combined, they create a balanced meal that is both satisfying and healthful.
