Sweet Potato and Spinach Stuffed Sweet Peppers

Ingredients Needed

  • 4 large sweet peppers (red, yellow, or orange)
  • 2 medium sweet potatoes, peeled and diced
  • 2 cups fresh spinach, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup shredded cheese (optional)

Preparation Steps

Start by preheating your oven to 400°F (200°C). Cut the tops off the sweet peppers and remove the seeds and membranes. Place them in a baking dish and set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.

Add the diced sweet potatoes to the skillet. Stir in paprika, salt, and pepper. Cover and cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.

Once the sweet potatoes are cooked, stir in the chopped spinach until wilted. Remove from heat and let the mixture cool slightly.
