Ingredients Needed
- 1 cup sushi rice
- 1 block firm tofu
- 1/4 cup soy sauce
- 2 tablespoons honey or maple syrup
- 1 teaspoon sesame oil
- 1 cucumber, sliced into thin strips
- 1 avocado, sliced
- 1 carrot, julienned
- Seaweed sheets (nori)
- Vegetable oil for frying
- Optional: pickled ginger and wasabi for serving
Preparing the Tofu and Rice
Start by cooking the sushi rice according to package instructions. Once cooked, let it cool slightly. Meanwhile, cut the tofu into strips and marinate them in a mixture of soy sauce, honey, and sesame oil for about 10 minutes. After marinating, fry the tofu in a little vegetable oil until golden and crispy. Drain excess oil and set aside.
Assembling the Sushi Rolls
Place a sheet of nori on a bamboo sushi mat or a clean surface. Spread an even layer of rice over the nori, leaving about an inch at the top edge. Arrange a few slices of tofu, cucumber, avocado, and carrot in a line across the center of the rice.
Using the sushi mat, carefully roll the nori over the fillings, pressing gently to form a tight roll. Moisten the top edge of the nori with a little water to seal the roll. Repeat with remaining ingredients.
Serving and Enjoying
Slice each sushi roll into 6-8 pieces with a sharp knife. Serve with pickled ginger, wasabi, and soy sauce for dipping. These rolls are perfect for a light lunch or a fun dinner. Enjoy your homemade Teriyaki Tofu and Vegetable Sushi Rolls!
