- 2 large eggplants, diced

Preparation Steps
Begin by rinsing the rice thoroughly in cold water until the water runs clear. Set aside. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced eggplant and cook until it becomes soft and slightly browned, about 8-10 minutes. Remove the eggplant from the skillet and set aside.
