Ingredients

  • 14 oz (400 g) firm tofu, pressed and crumbled
  • 1 cup diced bell peppers (red, yellow, or green)
  • 1 cup chopped spinach or kale
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1/4 cup nutritional yeast
  • 1 teaspoon turmeric powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh herbs (parsley, chives, or cilantro)

Preparation

Preheat your oven to 375°F (190°C). Grease a baking dish or casserole dish with a little olive oil. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, cooking until fragrant and translucent, about 3-4 minutes. Add the bell peppers and cook for another 5 minutes until tender. Stir in the spinach or kale and cook until wilted. Remove from heat.

In a large mixing bowl, crumble the tofu using your hands or a fork. Add the nutritional yeast, turmeric, smoked paprika, salt, and pepper. Mix well to evenly coat the tofu with the spices. Incorporate the cooked vegetables and chopped herbs into the tofu mixture. Stir until everything is evenly combined.

Transfer the mixture into the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 25-30 minutes, or until the top is golden and slightly crispy. Remove from the oven and let it cool for a few minutes before serving.
