Preparation
Start by preparing the sauce. In a small bowl, whisk together tamarind paste, soy sauce, maple syrup, chili powder, and ground ginger. Set aside.
Cook the rice noodles according to package instructions. Drain and set aside.
Heat vegetable oil in a large skillet or wok over medium heat. Add cubed tofu and cook until crispy and golden, about 5-7 minutes. Remove from the skillet and set aside.
