Ingredients

  • 4 large whole wheat tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 ripe avocados
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation Steps

Start by preparing the avocado spread. In a bowl, mash the avocados and mix in lime juice, a pinch of salt, and pepper. Set aside.

In a skillet, heat olive oil over medium heat. Add diced red onion and red bell pepper, cooking until softened, about 5 minutes. Add the black beans, corn, cumin, chili powder, salt, and pepper. Cook for another 5 minutes, stirring occasionally, until heated through.

Warm the tortillas in a dry skillet or microwave for a few seconds until flexible. Spread a generous layer of avocado mixture on each tortilla.

Divide the bean and vegetable mixture evenly among the tortillas. Garnish with fresh cilantro leaves.

Roll up the tortillas tightly to form wraps. Slice in half diagonally if desired, and serve immediately.
