Ingredients
- 4 large Portobello mushrooms
- 1 cup cooked brown rice
- 1/2 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- Salt and pepper to taste
- 4 burger buns
- Fresh lettuce and tomato slices
- Olive oil for cooking
- For the aioli:
- 1/2 cup mayonnaise
- 1 teaspoon lemon juice
- 1 garlic clove, minced
- Salt to taste
Preparation
Start by preparing the mushroom caps. Remove stems and brush with olive oil. Grill or sauté until tender, about 5 minutes per side. Set aside.
In a mixing bowl, combine cooked brown rice, breadcrumbs, chopped onion, minced garlic, soy sauce, salt, and pepper. Mix well until the mixture holds together.
Form the mixture into four patties, slightly larger than the mushroom caps. Cook the patties in a skillet with olive oil over medium heat until golden brown on each side, about 4-5 minutes per side.
Prepare the aioli by mixing mayonnaise, lemon juice, minced garlic, and a pinch of salt in a small bowl. Adjust seasoning to taste.
Assembling the Burgers
Spread aioli on the burger buns. Place a lettuce leaf and tomato slices on the bottom half of each bun. Add the cooked brown rice patties topped with grilled Portobello mushrooms. Finish with more aioli if desired, then cover with the top bun.
