Ingredients

  • 1 pound ground beef or chuck steak, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (8 oz) tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • For the cornbread:
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • For serving:
  • Sour cream
  • Fresh chopped cilantro (optional)

Preparation

Start by heating a large pot over medium heat. Add the diced beef and cook until browned. Remove excess fat if necessary. Add chopped onions and minced garlic, cooking until softened and fragrant. Stir in chili powder, cumin, smoked paprika, salt, and pepper, cooking for another minute to release the spices’ aroma.

Add diced tomatoes, tomato sauce, and kidney beans to the pot. Stir well and reduce heat to low. Cover and let simmer for about 30 minutes, stirring occasionally, to allow flavors to meld.

Making the Cornbread

Preheat your oven to 400°F (200°C). In a mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk together milk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.

Pour the batter into a greased baking dish and bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

Serving

Serve the hot chili in bowls, topped with a dollop of sour cream and a sprinkle of fresh cilantro if desired. Accompany with warm cornbread on the side for a complete Western-inspired meal. This dish is perfect for cold evenings or when you crave something filling and flavorful.
