  • 1 cup wild rice
  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon fresh sage, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Preparation Steps

Start by roasting the butternut squash. Preheat your oven to 400°F (200°C). Toss the cubed squash with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for about 25-30 minutes until tender and caramelized.

Meanwhile, rinse the wild rice under cold water. In a large pot, bring the vegetable broth to a simmer and keep warm. In a separate large skillet or saucepan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.

Add the wild rice to the skillet and toast for 2-3 minutes, stirring frequently. Pour in a ladle of warm vegetable broth and stir until the liquid is absorbed. Continue adding broth, one ladle at a time, allowing each addition to be absorbed before adding the next. Stir constantly to prevent sticking. This process should take about 40-45 minutes, or until the rice is tender but still slightly chewy.

Once the rice is cooked, gently fold in the roasted butternut squash, chopped sage, and grated Parmesan cheese. Adjust seasoning with salt and pepper to taste. Serve hot, garnished with additional sage if desired.
